Gertie Carlsons Bread And Butter Pickles

Ingredients

6 quarts Sliced medium cucumbers
6 medium Onions; sliced
1 cup Pickling salt
1 1/2 quarts Vinegar
1/2 cup Mustard seed
6 cups Sugar
1 tablespoon Celery seed
1/4 Cayenne pepper; up to 1/3,

Method

Combine cucumbers, onions, ~~amp salt, and let stand for three hours. Drain. Combine seasonings and vinegar, and bring to a boil. Add cucumbers ~~amp onions. Heat to simmering and pack hot. Be careful to avoid boiling, as that makes the pickles soft. Pack hot into clean Ball jars and seal immediately. Notes - Im not sure if these need to be processed in a water bath or not.
