Ripe Cucumber Pickles
Ingredients2 quarts cut-up peeled seeded ripe cucumber 3 cups chopped onion 4 cups vinegar 1 1/2 cups sugar 1 teaspoon curry powder 1/2 teaspoon freshly-ground black pepper 1/2 teaspoon turmeric Cayenne pepper to taste 1 tablespoon dry mustard
MethodArrange cucumbers in crocks in layers, sprinkling layers with salt. Let stand overnight, then drain thoroughly.
Add onion, vinegar and sugar. Mix spices and add. Simmer gently, stirring occasionally, until cucumbers and onions are soft. Seal in sterile jars.
