Spicy Eggs

Ingredients

1 1/2 cups apple cider
1 cup white vinegar, 5% acidity
2 teaspoons salt
1 teaspoon pickling spice
1 garlic clove peeled
1/2 onion sliced
1/2 teaspoon mustard seeds
1 dozen medium-sized hard-cooked eggs peeled

Method

Combine all ingredients except eggs. Heat mixture to near boiling and simmer for 5 minutes. Place hard-cooked eggs in a quart jar. Pour hot mixture over eggs. Cover and refrigerate to season. Allow 2 to 8 weeks for eggs to season.

Drain before serving. Store in refrigerator.

This recipe yields 1 quart.
